Bazoy chocolate bar

Ingredients:

  • egg white, 100 g
  • sugar, 20 g
  • pinch of citric acid
  • starch molasses (caramel), 175g (can be replaced with trimoline)
  • water, 50g
  • dark chocolate, 100g

Preparation:

In the bowl of a mixer, whisk the whites with the citric acid. As soon as they turn into a light foam, add the sugar and whisk until stiff peaks.

Put a saucepan with molasses, sugar (20g) and water on the stove. Boil the syrup until it reaches 137C.

Slowly pour the hot syrup into the whipping whites without stopping for a couple of minutes, add the chocolate at the end.

You will get a fairly airy and soft mass – it is called nougat. Next, you will need a mold greased with any oil, in which you need to distribute the nougat.Work quickly, as the mass quickly hardens.
Leave it until it cools down completely. In the meantime, let’s get to the caramel.

Ingredients:

  • sugar, 250 g
  • cream 33%, 275g
  • butter, 75g
  • salt 0,5 tsp
  • pine nut flakes, 280g

Preparation:

In a saucepan, melt the sugar until caramel color. Add softened butter, stir and gradually add boiling cream. Cook the caramel until it reaches 108C.

Pour salt into the caramel and after it has cooled down completely, add 240g of pine nut flakes. Stir and pour into the mold with frozen nougat.

All That remains is to cool the billet, cut it into bars, melt the chocolate and carefully dip each piece. If desired, you can sprinkle additional pine nut flakes on top.

 

Sana-Nyar Pine Nut Chocolate Paste

Ingredients:

  • Chickpeas (boiled or canned) – 1.5 cups
  • coconut milk – 1.5 cups
  • bitter chocolate – 1/2 cup
  • sugar-free cocoa – 2 tbsp.
  • dates – 8 pcs.
  • salt on the tip of a knife
  • vanilla extract on the tip of a knife
  • pine nut flakes – 1 cup

Preparation:

Melt the chocolate in a water bath or in pulses (10 seconds each) in the microwave. Next, take a high-powered blender as you need a very fine fraction. Blend all the ingredients in the blender.

Pour into a jar, you can add some more pine nut flakes on top. Store the pine nut chocolate paste in the refrigerator. Since the product is all-natural, the shelf life of such a dessert is no more than 10 days.
