How to cook Cold Peach Soup with Pine Nuts
- Peaches 4 pieces
- Nectarines 4 pieces
- Sugar/Honey Syrup 150 ml
- Lemon 1 piece
- Pine nuts 75 g
- Peel the fruits and cut the pulp into cubes. Set aside half and blend the rest in a blender with sugar or honey syrup and lemon juice.
- Strain the juice and pour it into the tureen. Add fruit pieces. Stir.
- Roast the pine nuts in a dry frying pan and sprinkle the soup with them.
