How to cook Italian Almond Biscuits with Pine Nuts
- Sugar 100 g
- Ground Almonds 150g
- Salt pinch
- Egg white 1 piece
- Pine nuts 150 g
- Almond extract to taste
- In a deep bowl, mix the almond flour and sugar.
- In another bowl, beat the whites with a pinch of salt to the consistency of lightly whipped cream.
- Add the whipped whites to the almond mixture, add a couple of drops of almond extract, knead the dough with your hands and form a ball. Pinch a small piece of dough off the ball at a time, roll each piece in pine nuts and roll it into a small ball so that the nuts are inside the cookie ball. Lightly flatten the surface of each cookie before baking.
- Bake cookies in an oven preheated to 320 degrees of Farenheits for 25–30 minutes. Cool and help yourself.
