How to cook Italian Almond Biscuits with Pine Nuts


  • Sugar 100 g
  • Ground Almonds 150g
  • Salt pinch
  • Egg white 1 piece
  • Pine nuts 150 g
  • Almond extract to taste

Cooking Instructions:

  1. In a deep bowl, mix the almond flour and sugar.
  2. In another bowl, beat the whites with a pinch of salt to the consistency of lightly whipped cream.
  3. Add the whipped whites to the almond mixture, add a couple of drops of almond extract, knead the dough with your hands and form a ball. Pinch a small piece of dough off the ball at a time, roll each piece in pine nuts and roll it into a small ball so that the nuts are inside the cookie ball. Lightly flatten the surface of each cookie before baking.
  4. Bake cookies in an oven preheated to 320 degrees of Farenheits for 25–30 minutes. Cool and help yourself.
